Claudia our talented chef likes to come up with quick and easy recipes, here’s one of her favourites and prefect for this time of the year –
beetroot dip
Beetroot Dip
250g cooked beetroot
1/2 teaspoon of ground cumin
2 teaspoons of chopped mint
Squeeze of lemon juice
3 tablespoons of creme fraiche
Few pinch of nigella seeds
Put beetroot and cumin in the small bowl of a food processor, season and blend until smooth. Tip into a bowl, add the mint and lemon juice, then gently stir through crème fraîche to get a rippled effect. Sprinkle with mint leaves and nigella seeds.
